I hope you’re enjoying this sunny Saturday! This vanilla chia pudding makes a great breakfast, snack, or dessert. It really is healthy enough to eat any time of the day, but also enjoyable as a sweet treat! It’s filling, loaded with omegas and protein!
𝙸𝚗𝚐𝚛𝚎𝚍𝚒𝚎𝚗𝚝𝚜 (𝚜𝚎𝚛𝚟𝚎𝚜 4)
1/2 cup chia seeds
2 cups plant-based milk of choice
3 tsp vanilla extract
2 tbsp maple or agave syrup
Mix all ingredients together in a bowl. Let sit for 4 minutes until it begins to gel, and then give it a good mix again with a fork or a whisk. Pour the mixture evenly into your individual jars. Let sit for at least 2 hour refrigerated before serving, or overnight in the fridge.
Serve with fresh fruits, nut butters, jams, granola or anything else you’re heart desires. This will keep in the fridge for up to five days. I’ve topped mine with mango, raspberries, and toasted coconut!
